4.7% ABV - For our collaboration with Soaba Ichi and Farcry brewery in Japan, we have made a Soba Bīru, a Buckwheat beer. We used buckwheat in 3 different iterations: malted, raw (in the form of Soba noodles) and buckwheat honey, along with malted barley. Hops were kept to a minimum, and fermentation was done with a Kölsch yeast which contributes a lightly clean, fruity character.
